Breakfast B.L.A.T.

My friend Lorenzo makes the most delicious, most beautiful meals of anyone I know.  It’s really incredible.  Anyway, he’s been making B.L.A.T.s for as long as I can remember and I was craving one the other morning, so I put an egg on it.

INGREDIENTS

For the Sandwich:
2 fresh everything bagels, split and toasted (optional)
2 tomatoes, sliced
1 cup arugula
1 small avocado, sliced or mashed
6 strips bacon
4 eggs, fried or poached
Pinch of crushed red pepper, for garnish

For the Spicy Mayo:
1/2 cup mayo
1 Tbsp sriracha or hot sauce of choice
2 tsp Worcestershire sauce
Salt to taste

DIRECTIONS

For the Spicy Mayo:

  • Combine all ingredients in a bowl and set aside.

For the Sandwich:

  • Spread the spicy mayo on each slice of a fresh Everything Bagel.

  • Top each slice with (loosely) 1/4 to 1/2 cup of the arugula, sliced avocado, tomato, three half-slices of bacon, and a fried or poached egg.

  • Top with a pinch of crushed red pepper.
