"High on Fire" Burger

If you live in Chicago, or even if you’ve visited, you’ve most likely heard of Kuma’s Corner.  It’s a pretty big deal there.  Best burgers in town and the long lines are worth the wait.  All the burgers are named after heavy metal bands, which is pretty cool, if you ask me.  Here’s my version of the “High on Fire” Burger.

INGREDIENTS

2 lbs ground chuck
3 Tbsp steak sauce
2 egg yolks
1 ½ tsp kosher salt
¾ tsp freshly ground black pepper
1 roasted red pepper
4 slices prosciutto
4 slices grilled pineapple
Garlic Chili paste (in the store)
4 pretzel buns

 

DIRECTIONS

  • Mix the meats, steak sauce, egg yolks, salt, and pepper with the tines of a fork or your hands.
  • Lightly form each hamburger and lightly press into a patty shape.  Remember that the meat will shrink; I like to make mine a little bigger.
  • Heat a grill and cook the hamburgers for 3 to 5 minutes on each side until almost done. Remove to a plate and cover with aluminum foil. Allow the hamburgers to rest for 5 minutes.
  • Smear the chili garlic sauce on the bottom bun and top with prosciutto, grilled pineapple, and roasted red pepper.
