"Iron Maiden" Burger
Chicagoans loves Kuma’s Corner. I think tourists love it even more. Here’s my version of their “Iron Maiden” burger. Nick loves it and so do I. Let me know what you think!
INGREDIENTS
2 lbs ground chuck
3 Tbsp steak sauce
2 egg yolks
1 ½ tsp kosher salt
¾ tsp freshly ground black pepper
1 avocado, sliced
8 cherry peppers
4 slices pepperjack cheese
Chipotle Mayo
1 roma tomato
½ thinly sliced red onion
4 pretzel buns
DIRECTIONS
- Mix the meats, steak sauce, egg yolks, salt, and pepper with the tines of a fork or your hands.
- Lightly form each hamburger and lightly press into a patty shape. Remember that the meat will shrink; I like to make mine a little bigger.
- Heat a grill and cook the hamburgers for 3 to 5 minutes on each side until almost done. Remove to a plate, place pepperjack cheese on top and cover with aluminum foil. Allow the hamburgers to rest for 5 minutes.
- Smear the chipotle mayo on the bottom bun and top with avocado, red onion, tomato and cherry peppers
