Samosas (Samosa Cups)

We love these!  I made them into mini cups because Nick doesn't like too many carbs and really, the filling is where it's at!

INGREDIENTS

1 Tbsp olive oil
1 onion, chopped
1 ½ tsp curry powder
2 cups mashed potatoes (about 4)
10 oz. packages of frozen peas, thawed
15 oz. pie crusts, thawed
1 jar mango chutney (for serving)

 

 

DIRECTIONS

  • Remove from heat and stir in the potatoes and peas.
  • Unroll the pie crusts and, using a small glass, cut circles to fit each hole of a mini cupcake tin.
  • Once you’ve placed each circle of the crust into the mini cupcake holes, place a2 tablespoons of the potato mixture on top of the crusts.
  • Bake for 25-30 minutes until golden brown.
  • Serve with mango chutney.
  • Preheat oven to 375 degrees.
  • Heat the oil in a large saucepan over medium heat.  Add the onion and cook, stirring occasionally, until soft and golden brown, about 8 minutes.
  • Add ¾ tsp salt, ½ tsp pepper, and the curry powder and cook, stirring for 1 minute.
