Sweet Potato Casserole

My Aunt Maryanne always made the best sweet potatoes for Thanksgiving.  This is my delicious version of this classic Thanksgiving side dish.  Super easy to make!

INGREDIENTS


5 pounds peeled cubed sweet-potatos or yams
1 half cup stick of butter
1 cup dark brown sugar
1 cup sour cream
1/2 teaspoon salt
2 cups mini-marshmallows

DIRECTIONS

  • Steam sweet-potatos until they are fork-tender. Then churn potatos through a food-mill on a course setting while still hot.
  • Add butter and allow melting while mixing. Add brown sugar and salt and mix. Finally add sour cream.
  • Smooth mixture into a deep and wide caserole dish allowing at least one inch from top rim.
  • Prior to serving bake at 350 for 30 minutes or so until hot.
  • Cover evenly with mini-marshmallows and bake for another 4-5 minutes until marshmallows melt together and form a golden-brown.
