Queso Fundido Quesadillas

Queso Fundido is one of my favorites. I had some extra tortillas, so I turned it into quesadillas and I’m so glad I did!

INGREDIENTS

4 large flour tortillas
1 cup of Chihuahua cheese
1 poblano pepper
1 small white onion, diced
1/8 teaspoon oregano (preferably Mexican oregano if you can find it)
¼ cup store bought chorizo or other loose sausage
1 package of store-bought corn tortillas

DIRECTIONS

  • Brown chorizo in a sauté pan.

  • While chorizo is browning, slice pepper into julienne strips.

  • When the chorizo is cooked through, drain on a plate and cool to room temperature.

  • In the same pan, remove excess grease and add onions and peppers cook until soft, then add the oregano and stir to coat.

  • Add a little olive oil to a pan and when it’s hot, quickly add a flour tortilla.

  • Quickly sprinkle 1/4 cup of the cheese (should cover the bottom by 1/8 inch deep).

  • Put about 4 Tbsp each of the sausage and peppers & onions on top of cheese and finish with 1/4 cup cheese and another tortilla.

  • cook for about 3-4 minutes, then carefully flip and cook the other side for about 2-3 minutes.

  • Place the finished tortilla on a plate and let sit, uncut, while you go ahead and make yourself another one of those bad boys.

  • Let them sit for about 2 minutes before slicing into 4-6 triangles.

  • Serve with sour cream.
