Stuffing with Chicken Apple Sausage

I don’t care if it’s not Thanksgiving, I love stuffing all throughout winter.  This easy stuffing with chicken apple sausage is a staple on Thanksgiving, but makes for a great dinner any night I’m looking for a cozy dinner.

INGREDIENTS

1 stick butter
6 stalks celery, thinly sliced
1 large onion, minced
2 1/2 cups Chicken Broth
1 package (14 ounces) Pepperidge Farm Herb Seasoned Stuffing, cubed
1 pkg Chicken Apple Sausage, sliced thinly (I use Aidell’s package of 4 sausages)

DIRECTIONS

  • Heat the oven to 350°F.

  • Heat the butter in a 3-quart saucepan over medium heat. Add the celery and onion and cook for 5 minutes or until tender-crisp, stirring occasionally.

  • Meanwhile, add 1 Tbsp to a large pan and add sliced sausage.  Cooking, stirring occasionally, for about 5 minutes, until the sausage browns a little.  Set aside.

  • Add the broth to the saucepan and heat to a boil. Remove the saucepan from the heat.

  • Add the stuffing and mix lightly. Season to taste.

  • Add cooked chicken apple sausage and mix thoroughly.

  • Spoon the stuffing mixture into a greased 9x13x2-inch baking dish. Cover the baking dish.

  • Bake for 30 minutes or until the stuffing mixture it hot.

  • Uncover and bake for another 5 minutes.
