An Evening in Tuscany Sausage & White Bean Soup

This is the most simple, most delicious soup when you need some serious comfort food fast.  Any Evening in Tuscany brings it home with this flavorful soup - so good it’ll be gone before you know it!

INGREDIENTS

1 Tbsp olive oil
1 lb spicy Italian sausage 
1 red onion, diced
4 large carrots, chopped
2 Tbsp minced garlic
6 cups chicken broth 
30 oz canned white beans, rinsed and drained
3 cups spinach
2 bay leaves
1 tsp salt
1 tsp Milford Spice Company’s An Evening in Tuscany
1 cup heavy whipping cream

DIRECTIONS

  • Heat oil in a large pot. Cook sausage. 

  • Add onions, garlic, and carrots. Cook 3-4 minutes.

  • Add broth, beans, salt, Milford Spice Company’s An Evening in Tuscany, and bay leaves. Bring to a boil, reduce heat, simmer for 25 minutes until carrots are tender. 

  • Stir in spinach and heavy whipping cream and serve.
