Prosciutto, & Cantaloupe Salad

These unlikely ingredients pair perfectly together.  We've been having an extremely hot summer here in Michigan and refreshing salads are one of the ways that make it a little cooler.

INGREDIENTS

2 Tbsp olive oil
1 Tbsp champagne vinegar
Salt & pepper, to taste
1/2 cantaloupe, sliced
3 ounces prosciutto
8 ounces fresh burrata (or fresh mozzarella), torn into bite-size pieces
Mint leaves, for serving

 

DIRECTIONS

  • Whisk together the oil, vinegar, and 1/4 teaspoon each salt and pepper. Divide the cantaloupe, prosciutto, and burrata among 4 plates and drizzle with the dressing. Top with mint leaves.

*If you're in Michigan, you can find Burrata cheese at most Kroger, Meijer, Plum Market, & Whole Foods stores.
