Vegetarian Sushi Bowls

I love sushi, but I'm not a fan of fish, so these bowls are perfect.  Really, you can use whatever ingredients you want.  They're so lovely and colorful and perfect for summer on the back deck or patio.  Plus, they're super easy to make!

 

INGREDIENTS

1 cup sushi (or white) rice
1 Tbsp rice vinegar
1 Tbsp sugar
½ cup cooked edamame
½ cup thinly sliced red bell pepper
½ cup shaved cucumber
1 Tbsp ginger
½ cup matchstick carrots
½ avocado, sliced
Soy sauce (to serve)

 

DIRECTIONS

  • Cook the rice as directed.  Once cooked, add the rice vinegar and sugar and mix thoroughly.
  • Assemble the bowls, putting each ingredient in a separate section in a circle and place the ginger in the middle.  Serve with soy sauce.
