Tagliatelle with Crispy Brussel Sprouts & Burrata

I got this idea from an Instagram Story post from Angela Allen.  She was in Houston, TX, not long ago and went to Nancy’s Hustle Restaurant for dinner.  This dish looked so good, I had to try it for myself!  It's probably one of the best pasta dishes I've ever made.

 

INGREDIENTS

1 bag tagliatelle pasta
1 Tbsp crushed pistachios
1 bag fresh brussel sprouts
2 Tbsp olive oil
2 Tbsp Honey
2 Tbsp freshly grated parmesan cheese
2 balls burrata cheese
Salt & pepper to taste

 

DIRECTIONS

  • Preheat oven to 400 degrees.
  • Bring a large pot of water to boil and and salt.
  • Slice brussel sprouts in half and place on a lined cookie sheet.  Drizzle oil over them and sprinkle with salt & pepper.  Bake for 35 minutes or until crispy brown around the edges.
  • Once the water is boiling, add the pasta and boil for 8-9 minutes, stirring once in a while.  Drain pasta and set aside.
  • Remove the brussel sprouts and add 1/3 - 1/2 to the bottom of a large bowl.  Drizzle with half of the honey. 
  • Add the pasta back into the pot and add 1 ball of burrata and stir, breaking the ball and mixing thoroughly.  Pour the pasta on top of the brussel sprouts.
  • Sprinkle the rest of the brussel sprouts and drizzle with the rest of the honey (I love the honey, so I add a bit more).  
  • Sprinkle the parmesan on top.
  • Add the last burrata ball, break it, and top with the crushed pistachios.
