BBQ Chicken Salad

Need something delicious, fast, and healthy for dinner tonight?  This bad boy can be made in a matter of minutes!

QUICK TRICK:  Grocery stores have pre-cut veggies and rotisserie chickens (and if you're lucky, pulled chicken from the deli section!).  Throw these items together for a perfect family meal.  This goes great with corn bread, by the way.

INGREDIENTS

2 bags Dole shredded lettuce
1 Rotisserie Chicken (or pulled chicken)
1 pint grape tomatoes, sliced in half
1 can black beans, rinsed
1 10 oz. bag frozen corn, thawed
1 small container of diced red onions (from the produce section)
BBQ Sauce of your choice (I used the Original Sweet Baby Ray's here)
Ranch dressing of your choice (or sour cream)
1 avocado, sliced (optional)

DIRECTIONS

  • Put the pulled chicken in a non-stick pan (or spray your pan with non-stick cooking spray) on medium heat and add 1 Tbsp water.  Add 1/2 cup BBQ sauce and stir until it's coated thoroughly.
  • Toss the other ingredients together, except for the Ranch dressing and avocado), until mixed thoroughly.  Top with avocado and ranch.
