Avocado Ice Cream
I love ice cream a little too much, so I don't buy it a lot when I grocery shop. I found this recipe and Nick and I both tweaked it after the first try to make it one of our favorite treats after dinner. We both love avocados, so this was a no-brainer. Next, I think I'll try vanilla. This recipe is super great because you don't need an ice cream maker!
INGREDIENTS
1 avocado, pitted and peeled
1 14oz can of sweetened condensed milk
2 Tbsp lemon juice
pinch of salt
2 cups heavy whipping cream (1 container, I use land o'lakes)
1/4 cup sugar
DIRECTIONS
- chill a 9x5 loaf pan in the fridge for a half hour
- combine all but heavy whip and sugar in your blender and blend until smooth
- pour the heavy whip and sugar in a large bowl and, using your electric mixer, whip until you get some peaks when you pull away (like you're making whipped cream).
- pour the avocado mixture in the heavy whip mixed bowl and fold contents until blended.
- pour all into the chilled loaf pan and set in freezer over night.
