Black Bean Verde 7-Layer Dip
Lately, I’ve been really in to greens and purples when it comes to plating food. Red seedless grapes with cucumbers, blueberries, blackberries, and sugar snap peas on a charcuterie board? Forget it - I’m in!
I really just made this dip because I wanted a certain look, if we’re being honest. But I finished eating this dip because daaaaayum is it good!
INGREDIENTS
1 15 oz can refried black beans + 1/2 tsp cumin + 1/2 tsp salt
16 oz sour cream mixed thoroughly with taco seasoning packet
1 - 2 cups guacamole
1/2 cup salsa verde
1/2 cup diced red onion
2 cups mixed, finely shredded monterey jack & pepper jack cheese
1 cup fresh chopped cilantro
1/2 cup chopped scallions
DIRECTIONS
After you’ve shredded your cheese, mixed your refried black beans with cumin & salt, made your guac, salsa verde, diced your onion (but really, there’s no shame in buying diced onion from your grocer’s produce section), and shredded your cheeses, layer the dip as follows:
Layer 1: refried black beans
Layer 2: guacamole
Layer 3: seasoned sour cream
Layer 4: diced red onion,
Layer 5: salsa verde
Layer 6: shredded monterey & pepper jack
Layer 7: cilantro & scallions
