Chicken Gyros

Simple, delicious, and perfect for an easy weeknight dinner. What’s fantastic about this meal is just how easy it is to make and how it takes practically no time to make. I’ve been a little busier than usual lately, and these rocked our Monday night hard!

INGREDIENTS

1 lb boneless, skinless chicken tenderloins
1 tbs of extra virgin olive oil
2 ½ tsp dry thyme
1 ½ tsp dry oregano
2 tsp sweet paprika
1 ½ tsp garlic powder
1 ¼ tsp salt
Greek pita bread
Tzatziki
Tomato, sliced
Red onion, sliced
French Fries

DIRECTIONS

Preheat the oven grill (broiler) with fan setting at 400°F. Drizzle the extra virgin olive oil all and sprinkle the seasoning mix all over the thigh fillets. Massage the spices onto the chicken and allow the marinated chicken to rest in the fridge for at least an hour or overnight.

Preheat the oven to 400 degrees.  Lay baking paper on a large oven tray and then place the marinated chicken spread out on the tray. Bake the chicken for 20-25 minutes, flipping them over halfway through.

After that time remove the chicken on a chopping board and with a sharp knife slice the chicken in strips along the width. Place the chicken back on the baking tray and stir the strips through the juices released for some extra flavor and juiciness. Serve in a pita wrap with the accompaniments listed or add it on a fresh salad of your choice.
