Marie's Favorite Flatbread
No kidding, this is the best flatbread I’ve ever had. It’s sweet and salty and savory and fresh all at the same time and I’m craving it again as I write this.
INGREDIENTS
3 Tbsp olive oil, separated
5 cloves garlic, minced or grated
1 ball frozen Tiseo’s dough, thawed (or 1 pkg store
bought pizza dough)
2 cups freshly shredded mozzarella
2 pears, washed and thinly sliced
1/2 large red onion, thinly sliced
8 oz crumbled gorgonzola
1/4 cup mission figs, sliced in quarters
5 oz arugula
1/4 tsp salt
1/4 tsp pepper
DIRECTIONS
Preheat oven to 400 degrees.
On a large lipped baking sheet, stretch out pizza dough in a rentable about 9x13” in size.
Brush the olive oil and grated garlic evenly over the dough. Sprinkle mozzarella over dough evenly. Top evenly with pear and red onion slices, fig and gorgonzola.
Bake for 30 minutes.
While that’s baking, mix together arugula and 1 Tbsp olive oil (I use garlic olive oil), and salt & pepper.
When the flatbread is done baking, it should be slightly browned and bubbly, take it out of the oven and let cool for about 5 minutes.
Top evenly with arugula mixture.
