Michigan Cherry Salad
Almost every morning on Instagram, I ask followers questions about what they like to cook and what they like to eat. Michigan Cherry Salad was a response one day, and I realized I haven’t ever had one! Well, needless to say, I had to make this absolutely fantastic salad, and I’ve definitely had it more than once.
INGREDIENTS
For the Dressing:
1 (heaping) tsp Dijon mustard
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
1½ Tbsp maple syrup
1/4 cup cider vinegar
6 tablespoons olive oil
For the Salad:
5 ounces baby spinach
5 ounces spring mix
1 large honeycrisp apple, cored and sliced
1/2 small red onion, sliced thin
4 ounces crumbled gorgonzola
1/4 cup maple glazed pecans (I found mine at Meijer)
1/2 cup dried cherries
minced fresh parsley, for serving
freshly ground black pepper, for serving
DIRECTIONS
In a glass jar, add Dijon, salt, pepper, maple syrup, cider vinegar and olive oil. Secure the lid, shake well before serving.
Toss the spring greens with the spinach. Top with sliced apple, red onion, crumbles of the gorgonzola, cherries and the candied nuts. Drizzle spoonfuls of the cider dijon dressing over top. Sprinkle with a little chopped fresh parsley and black pepper.
