Breakfast Pizza
Two of my favorite things in one dish just makes me so happy! This dish is so easy to make and so perfect - it’ll make you happy, too. promise!
INGREDIENTS
1 pkg store-bought pizza dough
3 Tbsp olive oil
3 eggs
5 pieces Prosciutto
1 8 oz ball burrata
1/ 2 cup shredded Gruyere cheese
1/ 2 cup arugula
Salt, to taste
Coarsely cracked black pepper, to taste
DIRECTIONS
Prepare the dough according to the package.
Divide in 2-3 equal parts and shape them into balls using your hands. Once done, cover them with a clean cloth and let them stand for 30 minutes at room temperature, before using them to make your pizzas.
Preheat the oven to 450°F and oil a baking sheet.
Spread the dough to your preferred size and place it on top of the baking sheet.
Rub olive oil on the pizza dough then spread the gruyere, along with half the arugula around the pizza. Sprinkle with 2-3 shakes of salt & pepper each and bake the pizza for 10 minutes.
After 10 minutes, pull the pizza out and add the burrata and prosciutto. Make little divots (careful - it’s hot!) and crack and egg into the divots. Top with a shake or two of salt & pepper over the eggs and bake for another 10 minutes (or longer depending on how you’d like your egg cooked - just keep an eye on it and make sure the white is cooked).
Top with the remaining arugula, and a teensy bit more salt & pepper (and crushed red pepper, if desired!).
