Cajun Snack Mix

I'm a big snacker. Usually, it's veggies or pretzels with hummus, but sometimes I spice things up a big and make a delightfully, delicious snack mix that we can enjoy for the week. This one even has Bugles in it! Remember those? I don't think I'd had them since I was a kid until I made this mix. We love it!

INGREDIENTS

For the Cajun-Style Seasoning Mix:

1 cup melted vegan butter
3 Tbsp nutritional yeast
2 Tbsp garlic powder
1 Tbsp smoked paprika
2 tsp onion powder
2 tsp mustard powder
1½ tsp ground black pepper
1 tsp cayenne pepper
1 tsp dried parsley

For the Snack Mix:

3 cups Bugles
3 cups vegan-friendly Chex-style cereal
2 cups Garlic Rye chips
2 cups pretzels (I used mini pretzels)
1 cup assorted mixed nuts
1 cup oyster crackers

DIRECTIONS

  • Preheat oven to 325° F.

  • Place the melted butter and seasonings in a large bowl and whisk until combined.

  • Gently add the snack mix to the bowl, tossing to combine to seasonings and snack mix, about 3 minutes. Spread the mix evenly onto a rimmed baking sheet lined with parchment paper.

  • Bake for 30 minutes, gently tossing halfway through.

  • Serve immediately.

  • Store the snack mix in a sealed jar up to 7 days.
