QUICK TRICK: Still have that Pumpkin Bread Mix leftover from Thanksgiving? Get yourself some Ben & Jerry’s Cookie Dough bites from your grocer’s freezer! Follow the directions on your Pumpkin Bread Mix box, fill each muffin cup half-way, then plop a few dough bites in, and fill it up!

For a delicious, simple, brown sugar crumb top: Combine 1/3 cup brown sugar, 1/2 tsp ground cinnamon, and 2/3 cups all-purpose flour. Add 4 Tbsp melted butter and stir to combine. Just spoon a little of the mixture on top of the muffins before putting in the oven!
