Minimalist Baker House Salad

Simple. Vegan. Delicious.

INGREDIENTS

For the dressing:

2 Tbsp plain hummus
½ lemon, juiced
¼ tsp garlic powder
1-2 tsp maple syrup 

For the salad:

2 cups chopped romaine lettuce
4 cherry tomatoes
¼ cup carrots, diced
¼ cup red onion, sliced
¼ avocado, cubed
1 tsp hemp seeds

DIRECTIONS

  • Whisk together the hummus, lemon juice, garlic powder, and maple syrup in a small bowl.  Taste and adjust the seasonings as needed.  Thin with water (if needed) until pourable.

  • Add all of the salad ingredients to a small serving bowl.  Add the dressing and toss to coat.

  • Leftovers keep well (separated) covered in the refrigerator for 2-3 days.  Multiply ingredients by the number of people for a larger salad.
