Tomato Galette

This is super good and way lighter than pizza.  It’s great with heirloom tomatoes, but for this particular Galette, I used Kumato tomatoes because that’s what was in my kitchen. Either way, We love it!

INGREDIENTS

Frozen pie dough, thawed
4 Tbsp Parmesan Cheese
3 Heirloom Tomatoes (or whatever is on hand), sliced
3 Tbsp Goat Cheese
Salt & Pepper to taste
1 egg, beaten

 

DIRECTIONS

  • Roll out the pie dough; top with goat cheese, 3 Tbsp of the parmesan cheese, salt and pepper.

  • Pile on the tomatoes & fold galette edges over the tomatoes -brush with egg wash and sprinkle of the remainder 1 Tbsp of the parmesan.

  • Bake at 400°F for 30 - 35 mins.

  • Top with fresh basil.
