Vegan Apricot Cake

Summer isn't over just yet!  Nick loves apricots so much.  I wanted to make him a treat for taking us to Pictured Rocks National Lakeshore this summer.  Try this delicious, easy to make, vegan cake!

INGREDIENTS

1 cup plant based milk
½ cup sunflower oil
1 Tbsp apple cider vinegar
1 Tbsp lemon juice
1 Tsp vanilla extract
2 cups flour
1 cup vegan brown sugar or coconut sugar
1 ½ tsp baking powder
4 apricots, halved and de-pitted
Vegan margarine
Confectioners sugar

DIRECTIONS

  • Preheat your oven to 350 degrees.
  • Mix all wet ingredients together in a large bowl.
  • In a separate bowl repeat process with all dry ingredients and then pour into the bowl with the wet ingredients and mix together well until you have a smooth dough.
  • Grease the sides of a round baking pan (or whatever you use for a smaller cake) with margarine. Then pour the dough mixture into it.
  • Halve 10-12 apricots and add the fruits to the batter (facing up).
  • Bake for 35 - 40 minutes.
  • Do the toothpick test (stick a toothpick into your cake and if it comes out dry with no batter sticking to it then it should be fine) and let rest for about 30 minutes or until it has cooled down.
  • Sprinkle the confectioners sugar on top once cool (it will melt into the cake if it’s hot).
