Zucchini & Roasted Corn Pizza (revisited)
This pizza is ridiculously tasty and super easy to make. Don’t hesitate to get yourself some pre-made cauliflower crust from your grocer’s freezer to make this bad boy!
INGREDIENTS
1 frozen cauliflower pizza crust
1/2 cup chopped fresh oregano and basil
2 cups shredded provolone
2 small zucchinis, thinly sliced
1 cup corn
Salt & pepper to taste
4 oz brie, cut into small pieces
1/2 cup fresh basil leaves
crushed red pepper flakes
Chipotle Honey
1/4 cup honey
2 canned adobo chipotle peppers, chopped (just 2 peppers from 1 small can)
DIRECTIONS
Preheat oven to 425 degrees.
Make the Chipotle Honey: Mix together the honey and chopped chipotles in a small Ball jar (or whatever you have that’s similar). Store in a cool place for up to 1 month.
Open the frozen cauliflower crust and place on a lined baking sheet (I use nonstick Reynolds wrap).
Sprinkle the chopped fresh oregano and basil evenly on top. Then sprinkle the provolone on top.
Add the corn and zucchini, spread evenly and season with salt & pepper.
Next, add the brie pieces.
Place in the oven for 15 minutes or until the cheese starts to melt.
This next step is super important: Take the pizza out, turn on the broiler, and place back in the oven for EXACTLY 1 minute - no longer than that because it will burn.
Top with crushed red pepper, fresh basil leaves, and drizzle with chipotle honey.
