Breakfast Bowl
What a great way to start the day! This Breakfast Bowl can be enjoyed any time of the day. It’s healthy, flavorful, and delicious.
INGREDIENTS
2 cups kale
1 Tbsp extra virgin olive oil
1 Tbsp lemon juice
2 Tbsp chopped fresh parsley
2 Tbsp chopped fresh dill
1 cup cooked quinoa
2 soft-boiled eggs
1 avocado, sliced
4 radishes, sliced
2 Tbsp granola
DIRECTIONS
- Fill a pot with cold water and add the eggs. Bring to a boil. Once it starts boiling, turn off the stove and let the eggs sit for 6 minutes, then transfer to a bowl of cold water with ice. Let them sit for a few minutes, then peel shells.
- Chop Kale and transfer to a bowl. Mix in the lemon juice and oil and massage the kale until it’s soft (a minute or two).
- Add the parsley, dill, and quinoa and mix thoroughly.
- Season with salt & pepper.
- Transfer to two serving bowls and top with sliced radish, halved eggs, avocado, and granola.
