Mike's Cheesy Potatoes
My Grandmother always had Christmas Eve dinner at her house. Don’t ask me how she managed to cook meals for 35+ people every year, but she did. It was amazing. When she got sick, my brother Michael went to visit her every single Monday to take her out to dinner. Literally - every Monday night. He’s the greatest person I know. After she passed, Michael started bringing her cheesy potatoes to family dinners. He shared the recipe with his little sister, and for that, I’m so grateful. It’s simple, but a crowd-pleasing dish. And, as an added bonus, it always makes me think of Granny.
INGREDIENTS
8 oz. sour cream
½ stick melted butter
1 bag of frozen Ore-Ida diced potatoes
16 oz. sharp cheddar cheese
1 can of cream of potato soup
DIRECTIONS
- Preheat oven to 420 degrees.
- Mix all ingredients together and place in baking dish.
- Bake for 1 hour and 10 minutes until golden brown.
