Peach Cobbler
This is one of the easiest recipes. Ever. I served it for dessert yesterday when we had my mother over for lunch. She asked if I could heat it up and was happy to hear it was just out of the oven and still warm. It goes really well with vanilla ice cream. Speaking of ice cream, mom brought me an ice cream maker yesterday that she never uses. Score!
INGREDIENTS
4 cups peaches, peeled and sliced
2 cups sugar
8 Tbsp butter
½ cup water
1 ½ cups self-rising flour
1 ½ cups milk
ground cinnamon (to top)
raw sugar (to top)
DIRECTIONS
- In a mixing bowl, slowly mix the flour, milk, and remaining sugar slowly to prevent clumping.
- Pour the flour mixture over the melted butter in the baking dish.
- Spoon peach mixture over and top with cinnamon spinkles.
- Bake for 30 minutes. Then pull it out and sprinkle with raw sugar and place back in for 5 minutes.
- Preheat oven to 350 degrees
- In a saucepan, add water, 1 cup of sugar and peaches. Bring to a boil and then let it simmer for 10 minutes. It’s going to make delicious peach syrup along with the peaches.
- Cube the butter and place it in a 4-quart baking dish. Place in the oven for 3 minutes to melt.
