Easy Chicken Burrito Bowl (Quick Trick)
Only a few more days until Christmas, then before you know it, it's New Year's Eve. Between cleaning the house for guests, wrapping presents, and decorating the house, plus work and all the regular household duties you have, it feels like there's just no time for a healthy dinner for you and your family, right?
Here's an easy recipe that takes about five minutes to put together:
QUICK TRICK:
- 1 bag Dole Shreds lettuce
- 1 small bag Tyson Fajita chicken strips (refrigerated section in your grocery store)
- 1 can black beans, heated on stove with 1/2 packet of taco seasoning and 2 Tbsps water
- 1 small package of pre-made pico de gallo from your grocery store
- 1 bag shredded Mexican cheese blend
- 2 green onions, thinly sliced
- 1 avocado, pitted and cut into 1-inch squares and tossed with lemon juice
- 1 red bell pepper, thinly sliced
- *topped with sour cream and tortilla strips
Combine all ingredients in a large bowl. Serve on its own or with tortilla chips (for a Taco Salad).
