Elote Salad

This is Nick’s all-time favorite snack.  We used to get something similar at Antique Taco in Chicago.  It’s perfect for any summer BBQ or taco night.

 

INGREDIENTS

1 15 oz. can black beans
1 12 oz. bag frozen corn, thawed
5 tomatoes, diced
1 white onion, diced
1 jalapeno, deseeded and diced
2 Tbsp cilantro
2 avocadoes, cut into ½ inch cubes
4 Tbsp mayo
3 Tbsp grated parmesan
1 tsp cayenne pepper

 

DIRECTIONS

  • Mix all the ingredients together, folding to coat the mayo and parmesan.  Serve chilled.  We use tortilla chips for easy, delicious delivery.
