Savory Breakfast Bowl

Breakfast is the best, am I right? Now that it’s fall, I’m going strong with my savory breakfasts and I’m loving it! I’ve also been super aware of my hot sauces lately (what’s up with that?), and I’ve noticed that the hot sauces I tend to prefer have really specific uses. For instance, Frank’s Red Hot is perfect on grilled cheese and Mac & Cheese. Now then, if I’m being really honest here, the key to this dish is the egg, so the best hot sauce for this bad boy is Cholula. Cholula is fantastic with eggs!

INGREDIENTS

1/2 cup cooked quinoa
1 egg
1/2 cup shredded kale
1/4 cup black beans, drained and rinsed
1 tsp cumin
1/4 cup tomatoes
1/3 avocado
1 tbsp feta cheese
1tbsp cilantro
Hot sauce

DIRECTIONS

  • Start by preparing your quinoa according to package. For a little flavor, you can use vegetable broth in lieu of water.

  • Prepare poached egg. To poach an egg, In a small pot, fill water to boil. Add 1-2tsp of white vinegar to the water. Crack an egg into a small bowl. Turn down the gently boiled water to a simmer. Start to spin the simmering water and drop the egg into the barely simmering whirlpool. Wait 3-5minutes until cooked and the whites are set. Remove from the water and set aside.

  • Add black beans and cumin to small pot with 1-2 Tbsp water, and stir until boiling.  Set aside.

  • Saute kale in a pan for 2-3 minutes with olive oil, sea salt and pepper.

  • Assemble bowl with cooked quinoa, kale, black beans with cumin, tomatoes, feta cheese, cilantro, avocado and poached egg. Drizzle with hot sauce.
