Pear, Prosciutto, Brie, Chili Fig Sandwich

Oh boy I could eat these salty, sweet, spicy sandwiches all dang day. Thanks to my friend Abby, who introduced me to the magic that is Chili Fig Spread; I am hooked!  These bad boys are perfect for a sunny afternoon in the park!

INGREDIENTS

1 loaf ciabatta bread, halved lengthwise
2 pears, thinly sliced
4 Tbsp Divina Fig Chili Spread
9-12 ounces prosciutto
1 8 oz wheel Brie, sliced
2 cups baby arugula

DIRECTIONS

  • Lay the bread cut side up on a cutting board. Working with the top piece of ciabatta, pull out some of the insides to create a space for the filling. Spread both sides with 1/2 Tbsp of the Fig Chili Spread. Layer on the pear slices, assorted meats, and Brie. Sprinkle the arugula over the brie. Add the top half of the ciabatta and gently push down on the sandwich.

  • Slice the sandwich and serve or wrap the sandwich tightly and place in the fridge for up to 1 day. Before serving, cut 4-6 sandwiches.
