Thai Chicken Egg Rolls
Meijer carries ground Sweet-Thai Chicken by Mighty Spark. I received it by accident from a Shipt shopper of mine and I was happy I did! I ended up making these delicious egg rolls with it and they were super delicious!
INGREDIENTS
1 pkg ground Mighty Spark Sweet-Thai Chicken
20-22 square egg roll wrappers
1 bunch green onion, sliced thin, save about 2 Tbsp for serving
1 pkg bean sprouts
2 carrots, julienned
DIRECTIONS
Preheat the oven to 425 degrees F. Lightly grease 2 baking sheets.
In a bowl, combine the chicken, green onion, bean sprouts, and julienned carrots.
To assemble, spoon 2 tablespoons of filling onto each wrapper. Brush water around the edges of the wrapper, then roll up and place on the baking sheet. Brush each roll lightly with olive oil. Transfer to the oven and bake for 10-12 minutes, then flip and cook another 8-10 minutes more, or until the rolls are crisp.
Top with the remainder green onion and soy sauce (or any Thai dipping sauce you like).
