Vegetable Pizza

I've had a pretty busy week getting ready for our upcoming road trip and working on some catering orders.  Though I haven't had a ton of time to cook for myself, this quick and easy Vegetable Pizza really hit the spot.  What are your favorite veggies to put on pizza?

INGREDIENTS

1 ball frozen Tiseo's dough, thawed
1 jar pizza sauce
1 16 oz. bag shredded mozzarella
1 ball fresh mozzarella, thinly sliced
1/4 cup spinach
1/2 zucchini, sliced
1/2 yellow squash, sliced
1/4 cup carrots, thinly sliced (shoestrings)
1/4 cup cauliflower, chopped
1/4 red onion, sliced thinly
1 tomato, sliced
Olive oil
Garlic powder
Sesame seeds (for crust)

 

DIRECTIONS

  • Heat oven to 350 degrees.
  • Knead dough out in a circle, using your fingers to create a bit of a crust; thinner in the middle and a little more dough around the edge.
  • Spread the jar of pizza sauce evenly over the dough, excluding the crust.
  • Sprinkle the shredded mozzarella over the sauce evenly, then cover with the spinach, zucchini and squash and carrots.
  • Add the fresh mozzarella, then top with the cauliflower, tomato, and red onion.
  • Add salt, pepper, and garlic powder to taste.
  • Brush olive oil on the outer crust, then sprinkle with sesame seeds and garlic powder.
  • Bake for 35-40 minutes, until the fresh mozzarella just starts to bubble.
