Pumpkin Gruyere Dip
This is one of my favorite dips to make! First off, it's got gruyere cheese, second, it's so easy to make, and third, it's served in a pumpkin for crying out loud! It makes such a cute decorative piece for any party during the holidays. Or just scarfing it down watching Netflix in your kitchen.
INGREDIENTS
1 pie pumpkin
1 ¼ Heavy whipping cream
3 garlic cloves, smashed and minced
1 Tbsp fresh thyme leaves
6 oz gruyere cheese
Salt & pepper to taste
1 baguette
Watercress for garnish
DIRECTIONS
- Preheat oven to 350 degrees
- Cut the top of the pumpkin horizontally to make a lid. Scoop out the seeds and then place in a oven-safe dutch oven.
- Heat the cream and garlic in a sauce pan until it’s just at the boiling point.
- Remove and season with the salt and pepper and add the thyme.
- Bake for 45 minutes to an hour (depending on the size of the pumpkin. Make sure to check on it every once in a while, you don’t want it to collapse.
- Remove and sprinkle the gruyere cheese on top and pop it back in for about 10 minutes.
- Top with watercress and serve with sliced, toasted,baguette.
