Elote off the Cob

Elote is a popular street food in Mexico.  I had my first taste in Chicago; the proper way, on the cob.  It was so delicious, but honestly, a little tough to eat without getting it all over my face.  So, I went home and put all the ingredients together in a baking dish.  It is great!  Spicy and cheesy and creamy.  Hope you like it!

INGREDIENTS

32 oz bag of frozen corn
1 Tbsp butter
1 cup mayonnaise
1 cup grated parmesan cheese
2 tsp salt
2 ½ tsp cayenne pepper
2 tsp fresh cilantro, minced

 

 

DIRECTIONS

Preheat oven to 350 degrees.

Thaw corn and ,in a Dutch Oven or baking dish, melt the butter.  Add the corn and stir to coat.

Stir in mayo, parmesan, salt, and cayenne and coat thoroughly.

Bake for 30 minutes.

To serve, top with ½ tsp of cayenne and cilantro.
